I saw a bread pudding recipe posted in
bakebakebake and adapted it and the betty crocker recipe for my own. the whiskey sauce came from the better crocker book. it was an excellent way to use up our old bread (we're bread snobs and only like it fresh from the bread machine). Plus with it being snowy outside, a warm plate of bread pudding really hit the spot!

I got this recipe from a friend. SO freakin' tasty.
Blueberry Crumble Bars
1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold butter (2 sticks or 8 ounces)
1 egg
1/4 teaspoon salt
Zest and juice of one lemon
4 cups fresh blueberries
1/2 cup white sugar
4 teaspoons cornstarch
1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.
2. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
3. In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
4. Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.
Yield: about 24 bars (like the picture), or 36 small bars

We had Samuel's joint playgroup birthday party on saturday. I volunteered to be in charge of the cake because of Samuel's allergies. I ended up making cupcakes because it would be so much easier to feed 15 three year olds each their own cupcakes than dealing with cutting/serving an actual cake. They were very tasty, no one even noticed they were vegan!

Every culture has their "chicken soup" - in Viet Nam, it's rice porridge flavored with chunks of chicken called "chao ga". After eating mine, Todd says I've spoiled him for American chicken soup - he even claimed chao ga was better than chicken and dumplings. There is nothing better on a cold day, or when you're sick, than a big bowl of chao ga. :D

This is my favorite meaty chili recipe (since we don't eat red meat). It doesn't even taste like turkey. I make it whenever we have company, along with cornbread and it's always a smash hit. :)
INGREDIENTS
1 1/2 teaspoons olive oil
1 pound ground turkey
1 onion, chopped
1 cup water
**you can add 2 cups if you like it soupier
1 (28 ounce) can canned crushed or diced tomatoes
1 (8 ounce) can tomato paste
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
**I use pinto beans as my husband declares they are less gassy
1 (16 ounce) can black beans
1 tablespoon garlic, minced
1 cup celery or green pepper (for color and crunch)
Turkey Seasoning:
2 heaping tablespoons chili powder
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Chili Seasoning:
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 tablespoon brown sugar
**brown sugar is optional, I add it to knock down the spice level for Samuel
DIRECTIONS
Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, tomato paste, turkey seasonings and cook until tender.
Pour water into the pot. Mix in tomatoes, kidney beans, black beans, celery/green pepper and garlic. Season with the chili seasoning. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
and voila! I usually garnish with non-dairy sour cream on top
